I got creative and made a batch of  beet, tomato, and carrot soup. I boiled 3 beets until soft (the peeled and chopped them) while they were boiled I softened two onions in 1/2 cup olive oil, added 4 cloves of garlic (minced) & 1 tbs butter, 1 tsp cumin, salt, pepper, red pepper, cooked about 5 min, added 1/2 cup white wine, cooked down, added 3 shredded carrots until softened.  Then I added 1 can of Muir Glen crushed tomatoes and 1 can of tomato paste. brought to a boil, added chopped beets.. 2 bay leaf… Cooked for 45 min, removed leaves, blended with immersion blender and served! It’s very filling and GOOD for you! All organic and local veg.  I also froze HALF so we don’t get sick of it and so I take care of my future self! #whatsforlunch #ourbklyn
